Peanut Butter Frosting Recipe for Lizzy C

noooo, you can't have the frosting recipe first thing!!! You have to look at at few photos first!!!

My sis in law made me this page for me all for me in our Summer of 2012 Page Exchange.

We went fishing on the Little River right outside of Canton. Poor Ben. He had been watching that River Monster show. You know the one where the dude has that great voice and always lands something crazy that just ate someone the week before? Yeah. He was convinced he was the next Jeremy Wade.

I was actually quite relieved myself that nobody caught anything. It's not exactly pristine there down by the Little River and our rule is if you kill it, you eat it.

So, we went to Price Chopper and got fish dinners and fries for everyone instead! Nobody fell in and lots of poor frogs were caught. I was told Lexi even kissed one, but I think she was faking out Eddy.

And onto the recipe for Lizzy C. My sis in law is very worried that Australia may not have peanut butter frosting. ;-) Me too for that matter.

THIS is best eaten on a chocolate cake. It will make anything taste good. Is chocolate and peanut butter just a freaky American thing? I need to know!!!

Peanut Butter Frosting

1/2-3/4 c. creamy peanut butter
4 T. butter, softened
1 tsp. vanilla extract
1 1/4 c. confectioners' sugar
1-2 T. milk*

Put peanut butter, butter and vanilla extract in a large bowl. Using an electric mixer, whisk until pale and fluffy. Add in sifted confectioners' sugar. Add one tablespoon of milk. Mix by hand until smooth and creamy. If the frosting is too stiff*, add the milk one teaspoon at a time and mix by hand until the frosting is an acceptable spreading consistency for your cake/cupcakes.

And there you have it. I have another page of hers to share at some point, but it didn't scan like it should have, so I will save that for a post without a great recipe...can't have all the good stuff at once.

Happy Hump Day!!

  1. Freaky americnas and peanut butter - we are coming around to it more and more. Mostly just on toast though...

(Matt has just discovered Recce's peanut cups and loves them)

Will try this on choc cupcakes, I'm sure they will get consumed very quickly. xx

  8. Ok, I have to ask - what is confectioner's sugar - is that what you called it???!!! I HATE peanut butter. Long live vegemite. As for that stuff the kids seem to love over here, which is a combo of nuts & chocolate --can't remember the name --- sweet as, & they use it on TOAST for BREAKFAST...I'm sure some dentists run that food company!!!! BTW, those circles on your SIL's LO...got me an idea. Thank her from me:):):):)
